    No need to have eggs in the fridge all the time. Most baking requires room temp eggs and if necessary eggs can stay on counter for a considerable amount of time.

    Fresh eggs shouldn’t be stored in the fridge. They will stay “fresh” on the counter for 6 weeks or more!

    Another point not mentioned is that some bakers swear that eggs that have never been refrigerated make the fluffyist baked goods. The notion that eggs must be refrigerated stems from the fact that grocery store eggs can be months old before they reach the store and refrigeration is necessary for such long term storage. We need one in our house because we have our own chickens and eat them fast enough that there is no need to waste Refrigerator space on them. Also Louisville limits us to only 6 chickens which is about half what our family needs so we have to buy from a farmer outside the sprawling city limits. If you aren’t raising your own chickens you’re missing out on the greatest eggs you could ever eat and hours of really great entertainment. We have Crazy Chicken, Baby Chicken, Chicken Chicken, Sneaky Chicken, Houseplant Chicken, and Carnavorous Chicken in our coop, they named themselves and yes you would need to keep an eye on that last one.
